Rotisserie Chicken Salad with Cherries




INGREDIENTS

cups fresh baby spinach leaves
2
cups chopped skinned deli rotisserie chicken (from 3- to 3 1/2-lb chicken)

cup halved pitted Bing cherries
1/2
cup crumbled Gorgonzola cheese (2 oz)
1/4
cup chopped green onions (4 medium)
1/2
cup champagne dressing


DIRECTIONS
  • 1Place spinach on large platter.
  • 2Arrange chicken, cherries, cheese and onions evenly over spinach.
  • 3Drizzle with dressing. Serve immediately.


    Poppy seed dressing or Italian dressing can be substituted for the champagne dressing.
    If fresh cherries are not in season, use 1 can (15 oz) pitted dark sweet Bing cherries in heavy syrup (drained), 1 cup frozen (thawed) pitted cherries, or 1/2 cup dried cherries.
