SECRETS TO GREAT FRIED FISH

The tricks to making great fried fish is:

~always use fresh fish
~soak in milk at least an hour
~make sure fish is dry before dipping in egg mixture
~after dredging in dry batter mix let sit for 5 minutes before frying.
~use a cast iron skillet when possible
~make sure to heat oil on med-high heat for at least 10          minutes before adding fish.
