ATKINS COPYCAT BAKING MIX RECIPE

Atkins All Purpose Baking Mix (2 lb.)
You can use this as a substitute for all purpose flour providing that you do a little math. I cup of Atkins Diet Bake Mix equals 1 1/2 cup of regular flour. I’ve played around with a few recipes and found that you can make some nice treats with this, but you need to do some planning and a lot of experimentation. Instead of using sugar [which defeats the entire purpose of the mix in the first place] you need to use a sweetener like Truvia or Stevia. Make sure you read the packages to see what the conversion rate is since each of them differ slightly. Then you need to see what else is contained in your recipe – obviously you can’t make chocolate chip cookies unless you are using a special type of chocolate. The process of creating unique recipes is mostly trial and error so make sure you keep good notes of what you added, how much you added, baking times and if any special things were needed to create the batch. 



Try this homemade baking mix instead of the commercial mix for low carb recipes.

Total Time: 5 minutes

Ingredients:

  • 1 cup soy flour
  • 2 cups soy protein isolate
  • 2 Tablespoons baking soda
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 2 Tablespoons Truvia

Preparation:

Sift soy flour, soy protein isolate, baking soda, powder, salt, and Truvia. Store in an airtight container in a cool, dark place. Use as you would the commercial Atkins Bake Mix.


Yield: about 3-1/4 cups


Carbohydrate count: 3 carbs per 1/2 cup serving
