INGREDIENTS
1 pound lean ground beef
1/4 cup corn
1/4 cup peas
1 large onion, chopped (1 cup) or 1 shallot
1/2 teaspoon salt
1 cup shredded Cheddar cheese
1 cup ATKINS bake mix

HOW TO DO IT
1. Heat oven to 400. Grease a 9-inch pie plate. Cook ground beef and onion until beef is brown; drain. Spread in pie plate; sprinkle with salt and cheese.
2. Combine remaining ingredients in a small mixing bowl until blended. Pour into pie plate.
3. Bake for about 25 minutes or until knife inserted in the center comes out clean. Cool for 5 minutes.
