Roasted Muscovy Duck

This duck is amazing and SUPER easy to make. 
Just rub on the seasonings and throw it in the oven. 
I used a Muscovy duck, but any duck works for this recipe. 
I find a savory duck is far more popular in a group dinner rather than the sweet duck you usually have.

The day before...

Rub  
2 tsp. Seasoning Salt 
1/2 tsp. Accent
2 tsp. Minced Garlic
1 tsp. Pepper
2 tsp. Paprika 
into the skin and the cavity of the duck.
*Add a halved lemon or orange inside the duck for added flavor(optional) 
Keep the duck covered in refrigerator until ready to roast.

The day of cooking...

Preheat oven to 400 degrees. 

Slice or poke holes in the duck's skin. Not the meat, only the skin, this is very important.

Place duck in a roasting pan.

Roast duck in preheated oven for 1 hour.

Reduce  oven heat  to 350 degrees.

Spoon pan juices over bird, and continue cooking for 45 more minutes.

Baste duck again, and cook for 15 more minutes, or until golden brown.
                               ENJOY!!!

For Duck with Sauerkraut ...
*When your duck is almost done, after you have turned your oven heat down to 350 degrees... pour off most of the fat,  and add 1 jar of  rinsed sauerkraut and seasonings if you desire(I like caraway seeds, paprika and a bay leaf).Bake as directed the rest of the way. Spoon sauerkraut around the plated duck.

*Another way is to just season your rinsed sauerkraut, and fill your duck cavity with it, This is a bit greasier kraut, but the  taste is DIVINE!

BEST EVER SWEET POTATO CASSEROLE





















CRUST
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/4 cup butter (melted)

SWEET POTATO MIXTURE
3 cups mashed sweet potatoes (can use canned to save time, just drain)
1 cup sugar

1/2 tsp. cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs (well beaten)
1/2 cup butter, melted (1/2 cup)

Directions:

1. Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

2. Preheat oven to 350 degrees.

3. Combine sweet potatoes, sugar, salt, cinnamon, vanilla, eggs and butter in a mixing bowl  Mix thoroughly.

4. Pour mixture into greased baking dish.

5. Sprinkle top of the sweet potato mixture  with the crust mixture.

6. Bake for 30 minutes. Allow to set at least 30 minutes before serving.

Mr. Christmas Led Candle Window Clings

OMG...These are amazing..
O.k so this is one of the open boxes...I had no idea they would be this cool, so all of them were put up before I had a chance to get a picture ...

They are battery operated on a timer, so they go on 4 hours and off 20 hours all by themselves...no more plugs or cats knocking them over!!

I got mine at Walmart for less than 5 bucks...go get yourself some...they even flicker!!!

Dollar Tree Farmhouse Candles DIY


O.K....So all you need for this craft is a dollar tree:

~Battery candle
~Twine
~Bow
Some type of glue




Paint your base to your candle any color preferred...
Glue twine around the candle
Add a bow

THAT IS IT!!


Dollar Tree colander/ Dollar Tree strainer Christmas decoration.


Supplies needed

~2 colanders
~1 string Christmas light with white cord for the white (green for     the black one below)
~2 yards 2 inch wide ribbon
~Embellishments (picks, twine, bells.whatever floats your boat)
~Hot glue gun
Optional:Spray paint(if doing the black one or any color you prefer)

*Use 2 strainers/ colanders...Break the handles off of them , or cut them off...I used a serrated kitchen knife, but you could use a nippers, or a dremel tool also..just be careful not to cut yourself. The ribbon will cover it, so it doesn't have to be perfect by any means.

* Put your lights in between the colanders , you can glue some to the top if you want them more       spread out.

*Glue your 2 colanders together using hot glue.

*Glue your ribbon around the handle edges.

*Make a bow for the top using leftover ribbon.

*Add embellishments.

~I used a cable tie for the top to make a hanger..looping it thru the holes in the colander . You do not need to do this if you are putting it on a tabletop.

*Plug it in and ENJOY!!

Snowflake Hanger Tutorial (Dollar tree Craft)

Zip ties hold the 14 hangers in place and the glitter made them look classy and polished!

I used hangers I already had, so this cost be ONE DOLLAR!

 I used baby hangers to create different sizes and different large shaped hangers to create dimensions.

You can arrange them differently for a different look especially when doing a grouping.

Use kids hangers for small snowflakes!
































This is an AWESOME craft to do with children!!!

Galeux d'Eysines Pumpkin

My grandma (she was a farmer) called those "sugar scars". Any fruit or vegetable with lots of them are supposed to be sweeter than usual.

Peanut shell warts covering Creamsicle-colored flesh make the Galeux d'Eysines look like its suffering from a disease. The pumpkin was discovered in 1996 in Tranzault, France. The flesh is sweet and silky, no strings like many other pumpkins and squashes.
Galeux d’Eysines squash has salmon-peach colored skin that is covered in peanut-shell like protrusions. When maturing from green to orange, sugars in the flesh begin leeching through the skin which is what causes its unique, wart-like bumps. As the sugar content grows, the more nodes appear on the outside of the squash. The more peanut-shell like protrusions, the sweeter the squash. The flesh is a bright orange with a medium-sized seed cavity. Galeux d' Eysines squash has a sweet flavor, with a smooth velvety texture free from the fibrous strings found in many other squash varieties. Galeux d’Eysines can grow to be between ten and twenty pounds.

This pink-skinned pumpkin is lighter in density than most other pumpkins and is mild and fluffy when baked. It can be eaten straight out of the oven and is also good for soups and stews and baked with a pot roast.


Apple/Pumpkin Upside-down Cake.
In a warm oven, put 2 T butter to melt in a 9×13 or similar sized cake pan while you prepare the upside-down topping.  Peel and cube two large apples, retrieve the warming pan and toss the apples in the butter with 2 T sugar and 1/2 t cinnamon; wrap up sides to grease them, then distribute the apples evenly on the bottom and set aside.
Cream 1/4 cup of butter with 1/2 to 3/4 cup sugar (depending on how sweet your squash puree is); crack 2 large or 3 small eggs into the mix and continue to blend until smooth.  Stir in about 2 cups of pureed pumpkin or other winter squash and a cup of yogurt or buttermilk. Set aside.
Sift together 2 cups flour with 1-1/2 teaspoons each of baking powder and baking soda, and 1/2 teaspoon salt, along with another 1/2 teaspoon each ground cinnamon, cloves, nutmeg and allspice.  Add this dry mix to the wet and stir together.  Add milk to thin if it seems very stiff.
Bake in a 350* oven until a toothpick stuck in its center comes out clean, about 30-40 minutes.  Let cool slightly, run a knife around the sides of the cake, place a cookie sheet or large platter atop the pan and invert them, tapping the bottom of the pan to free it.  Adjust the apple chunks along the top and try not to eat in one sitting.
