TACO CORN CHIP CASSEROLE
1 pound ground beef
1 cup al dente cooked macaroni(not quite cooked)
1 can whole kernel corn
1/2 cup chopped onion
1 large jar salsa of choice 16 oz.
1 package taco seasoning mix
6 ounces shredded mexican blend cheese
1/4 cup chopped green pepper
1 small can diced green chilis
1 cup crushed Frito chips
1/2 cup sourcream
1/4 cup chopped green onions
Preheat oven to 350 degrees F .
Cook pasta in a large pot of boiling water until al dente. Drain.
In a large skillet, cook and stir ground beef, green pepper, and chopped onion over medium heat until brown. Mix in salsa, green chilis, corn, and taco seasoning mix. Stir in pasta.
Spoon beef mixture into a 9x13 inch baking dish.
Sprinkle grated cheese on top.
Bake for 15-20 minutes, until the cheese is melted.
Serve with crumbled Frito chips ,chopped green onions, tomatoes. lettuce, jalapenos,and sour cream, if desired.
